Thank you for the samples you had sent to me through my brother Jeff recently. It was a pleasure to sample the range of interesting product that you produce from the West Coast.
Being a Chef by trade, I have the occasion to use a variety of interesting products from all across the world. However, being a Canadian Chef, I enjoy and pride myself in using Canada's varied products from coast to coast. Your smoked salmon interests me because it is "hot smoked" instead of the "cold smoked" process that I typically use. The flavour of all the samples was excellent but I must single out the "Candied Salmon" - it was truly a treat.
Again many thanks for the opportunity to try your products and I hope that I will be able to bring Hardy Buoys Salmon to Ottawa.
